Hot soft Puran Poli is another specialty of Konkan. It is usually made in many states in Maharashtra. But the recipe of preparation is different. Similarly,  recipe from Alibag is different and unique. For the festival of Holi, It is made here in every household. “Holi Re Holi, Puranachi Poli” is a famous phrase here. Puran Poli is also made during Ganapati festival and many other festivals.

Puran Poli is made from maida (white flour) in Alibaug area. Flour is mixed with water, salt and colour are added and kneaded well. The kneaded flour is then soaked in oil for a few hours. Yellow lentils are cooked in water and an equal amount of jaggery is mixed in it, then this mixture is ground in a bowl for making puran. The flour soaked in oil is again ground well and then it is made into balls and rolled into honeycombs.Then they are gently pan-fried. Soft and crispy Puranpoli is ready. Pure ghee is poured on hot Puran Poli and eaten with milk. Puranpoli, once made, usually stay good for 5 to 8 days.
